There were two recipes that I never seemed to get right these past few years; cookies and pancakes. However, it seems like Santa has given me early Christmas gifts by coming across, literally, the best recipes ever for pancakes and gingerbread men cookies. Thank you, Santa!
Up till last week, I used to buy ready-made pancake mixes for whenever I craved pancakes for breakfast. To be honest, I was never fully satisfied by their taste or their look, but I just had to fill that pancake craving. They always turned out thin and burnt from one side just because I failed to do the pancake flip. Until someday last week, I thought I’d give homemade pancakes another shot and that’s when I found what seems to be the best pancake recipe ever.
YOU WILL NEED… 1) 1 ½ cups all-purpose flour 2) 3 ½ tsp baking powder 3) 1 tsp salt 4) 1 Tbsp white sugar 5) 1 ¼ cups milk 6) 1 egg 7) 3 Tbsp melted butter
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter. Then mix all together until the mixture forms a smooth batter. Heat a lightly oiled frying pan over medium-high heat, and pour ¼ a cup of the batter for each pancake. Cook until the pancake is brown on both sides. That is literally the recipe; it takes 5 minutes to prepare and around 10 minutes to cook a few. The pancakes come out so fluffy and thick; they make my stomach fill up so fast. Also, this recipe makes it so easy to perfectly flip the pancakes. *bonus points*
Now for the best part of every recipe; the toppings. Where your taste buds get to choose what they like to eat best. At the moment, I’m trying to maintain a healthy diet so I’ve been adding lots and lots of fruits plus a drizzle of honey and caramel on my pancakes. I’ve lost count of how many times I’ve made this recipe for breakfast in the last week. I mean, this was my breakfast for today and I think it’ll continue to be for a while haha.

So yeah two more recipes unlocked by the end of 2016 that are definitely going in my recipe box. I love how my recipe box just keeps having more and more recipes as time goes by. I think pancakes could be a perfect addition to breakfast on Christmas day, don’t you think? Let me know in the comments below if you have a certain breakfast meal on Christmas day. Until tomorrow’s blogmas (which is going live at 9 am by the way), cheers!
